Commis 2 - Main Kitchen Cold Section

About the role

Jumeirah Messilah Beach, a luxury beachfront resort in Kuwait, is hiring a Commis 2 for its Main Kitchen. The role sits within the culinary team and focuses on cold section work, with duties such as preparing quality ingredients according to recipes and plating guides while keeping the kitchen running smoothly.

Key responsibilities

• Assist colleagues and support culinary teams where needed, building team spirit, credibility, respect, openness and trust.
• Report accidents and sickness immediately to the Chef de Cuisine with clear details, and ask for help before any breakdown occurs.
• Relay breakdown information to the Chef de Cuisine so root causes can be identified and reoccurrences avoided.
• Adhere to safety procedures, food hygiene and safe food handling policies, and to culinary standards on recipes, preparation methods and plating.
• Liaise with the Stewarding Manager to keep the kitchen clean, and communicate equipment malfunctions to the Chef de Cuisine so engineering can respond.
• Follow set-up times and breakdown schedules for each meal period or event, and follow control and key procedures.
• Order, receive and store quality ingredients correctly using FIFO rotation, and prepare them professionally according to recipes, plating guides and buffet setups, minimising waste.

Required profile

• Minimum 5 years of culinary experience in a five-star hotel.
• Solid international culinary experience; knowledge of the style of cuisine.
• Ability to work in a multicultural environment.

Required skills

• HACCP knowledge.
• General health and safety awareness in the workplace.
