Cost Controller – Food & Beverage

About the role

We are a dynamic restaurant group operating across Kuwait and Saudi Arabia, specializing in authentic Bukhari cuisine and modern Middle Eastern dining. We are looking for an analytical and detail‑oriented Cost Controller to monitor, analyze, and optimise food, beverage and operational costs. The role is essential for maximising profitability, controlling inventory and minimising waste across all company branches.

Key responsibilities

• Analyse daily and monthly F&B costs, tracking yields, recipe variances and waste percentages across all locations.
• Conduct and oversee comprehensive physical inventory counts, investigating and resolving any stock discrepancies.
• Establish and maintain standard recipe costing (menu engineering), updating financial systems as ingredient prices fluctuate.
• Monitor purchasing processes to ensure procurement secures the best market prices without compromising quality.
• Audit receiving procedures to verify that delivered goods exactly match purchase orders and invoices in quantity, quality and price.
• Prepare detailed daily cost reports and monthly variance analysis, providing actionable recommendations to management.
• Collaborate with culinary and operations teams to implement effective cost‑saving measures and portion controls.

Required profile

• Bachelor’s degree in Accounting, Finance or Hospitality Management.
• Proven, verifiable experience as a Cost Controller within the Food & Beverage and restaurant industry.
• Advanced proficiency in Microsoft Excel for complex data auditing, yield analysis and cost modelling.
• Hands‑on experience with modern restaurant POS systems, inventory management platforms and accounting ERP software.
• Deep understanding of standard F&B recipes, batch processing, butchery yields and restaurant supply‑chain cycles.
• Valid and transferable residency in Kuwait.
