Assistant Pastry Chef (Shipboard)

About the role

The Assistant Pastry Chef supports the Executive Pastry Chef in delivering high‑quality pastry products aboard a cruise ship. This position ensures consistent taste, presentation, and compliance with health regulations while supervising a multicultural pastry team.

Key responsibilities

• Assist the Pastry Chef in supervising team members and enforcing company policies.
• Maintain quality and consistency of pastries according to corporate recipes and photographs.
• Set up pastry displays for buffets and teatime service.
• Ensure compliance with United States Public Health Rules and Regulations throughout operations.
• Oversee cleaning schedules, uniform standards, and personal hygiene of the pastry crew.
• Monitor food production, record leftovers, and control waste to stay within budget.
• Prepare food requisitions, receive deliveries, and manage proper storage.
• Participate in USPH inspections and stand by early when required.
• Track time and attendance, and support guest and crew inquiries.
• Attend meetings, training, and perform any additional duties assigned by supervisors.

Required profile

• Minimum two years’ experience as a Pastry Chef or equivalent in an upscale hotel, resort, cruise ship, or convention banqueting service.
• Culinary school degree required.
• Strong management, communication, problem‑solving, and decision‑making abilities.
• Excellent customer service, team‑building, and conflict‑resolution skills.
