Executive Sous Chef - Kuwait

About the role

Hudson Manpower is recruiting an experienced Executive Sous Chef for a reputed restaurant group in Kuwait. The role covers kitchen leadership, menu and cost management, staff leadership and compliance with food safety standards.

Key responsibilities

• Support the Executive Chef in achieving departmental and business goals, and lead Area Chef meetings in their absence
• Develop menus while controlling food costs, and prepare and manage operating budgets and expenses
• Manage labor costs, productivity and scheduling, and recruit, train, coach and develop kitchen staff
• Conduct orientation, performance reviews and cross-training, and maintain recipe databases and standard recipes
• Manage inventory, purchasing, stock control and waste reduction, and ensure compliance with food safety, hygiene and health regulations
• Analyze menu performance, conduct recipe audits and shelf-life validation, and support QA and continuous improvement
• Take part in new product development and R&D, and coordinate with other departments and facilities teams
• Monitor culinary KPIs, P&L reports and staffing needs, and perform regular food tastings and branch visits

Required profile

• Minimum 12-14 years of relevant culinary experience
• Minimum 2 years in the same or equivalent leadership position
• Bachelor's degree in Catering Science or Culinary Arts
