Italian Specialty Sous Chef - Olio Restaurant

About the role

Jumeirah Messilah Beach, a luxury beachfront resort in Kuwait, is looking for an Italian Specialty Sous Chef to join the culinary team at Olio Trattoria Italiana. The role leads the day-to-day operation of the Olio kitchen, ensuring culinary and service standards are consistently maintained.

Key responsibilities

• Prepare and supervise high-quality Italian cuisine according to approved recipes, portion sizes and plating standards, and develop seasonal dishes and Chef's Creations
• Support menu planning and development, bringing Italian culinary knowledge and current food trends
• Delegate daily production requirements based on business forecasts and supervise the team during preparation, service and breakdown
• Expedite orders during service and control portions, production and waste to support food-cost targets
• Ensure quality ingredients are correctly ordered, received, stored and rotated (FIFO), and inspect incoming produce
• Maintain food safety, hygiene and safe food-handling standards, and work with Stewarding on cleanliness
• Train and coach culinary colleagues, hold team briefings and plan food promotions with the F&B calendar
• Maintain kitchen documentation and coordinate with F&B service and other departments
• Report issues to the Executive Sous Chef or Executive Chef and report operational challenges promptly

Required profile

• Minimum 5 years of culinary experience in a five-star hotel
• Solid international culinary experience
• Ability to work in a multicultural environment

Required skills

• Knowledge of Italian cuisine style
• HACCP and general health and safety in the workplace
