Pastry & Bakery Commis (Entry Level)

About the role

The Pastry & Bakery Commis supports the daily operations of the pastry, bakery and cold kitchen sections, working under the direct supervision of senior chefs. This entry‑level position ensures high standards of quality, consistency, hygiene and food safety while helping to deliver artisan products at Earth Roastery Café.

Key responsibilities

• Assist in preparing doughs, batters, breads, pastries, cakes, creams, fillings and glazes.
• Support the production of artisan breads, croissants, muffins, cookies and other baked goods.
• Prepare salads, sandwiches, cold appetizers, dressings, platters and cold desserts.
• Slice, dice, portion and organize vegetables, fruits, meats, seafood and bakery ingredients according to standard recipes.
• Assemble, garnish and plate pastries, desserts and cold dishes to meet presentation standards.
• Maintain clean, organized workstations and follow mise en place procedures before service.
• Monitor product freshness, temperature and inventory, reporting any issues to supervisors promptly.

Required profile

• Entry‑level culinary professional eager to learn and develop pastry, bakery and cold‑kitchen skills.
• Ability to work under direct supervision of Pastry Chef, Bakery Chef, Sous Chef or Chef de Partie.
• Strong commitment to hygiene, food safety and consistent product quality.

Required skills

• Mise en place preparation and ingredient organization.
• Accurate execution of recipes with portion control.
• Food safety compliance, including HACCP standards.
• Inventory and stock control using FIFO procedures.
• Baking, pastry and cold‑kitchen preparation techniques.
