Senior Sushi Chef

About the role

We are looking for a passionate Senior Sushi Chef to lead our Japanese kitchen in Kuwait. The successful candidate will ensure authentic Japanese dishes are prepared to the highest standards while managing a fast‑paced restaurant environment.

Key responsibilities

• Lead and oversee daily operations of the Japanese kitchen.
• Prepare and supervise authentic Japanese cuisine, including sushi, sashimi, nigiri, maki rolls, tempura, ramen, donburi and other traditional dishes.
• Design and develop the restaurant menu in line with concept, market trends and profitability goals.
• Create standard recipes (SOPs), control portions and maintain presentation standards.
• Train, mentor and evaluate kitchen staff to uphold food quality and operational excellence.
• Manage food cost, inventory, purchasing and minimise waste.
• Ensure compliance with HACCP, food safety, hygiene and Kuwait Municipality regulations.
• Collaborate with restaurant management to deliver efficient service and exceptional customer satisfaction.

Required profile

• 2–3 years of experience in Japanese cuisine, with at least 1 year in a supervisory or Section Head role.
• Hands‑on experience in both hot and cold Japanese kitchen operations.
• Proven ability in menu development, recipe standardisation and food costing.
• Strong leadership and team‑management capabilities.
• Good command of English.
