Demi Chef de Partie - Sushi Specialist

About the role

Jumeirah Messilah Beach, a luxury beachfront resort in Kuwait, is hiring a Demi Chef de Partie for its Cold Kitchen. The role supports the sushi and cold kitchen operations and contributes to the culinary team's spirit and standards.

Key responsibilities

• Assist colleagues and support the culinary teams when required, helping build team spirit, credibility, respect, openness and trust.
• Report accidents and sickness immediately to the Chef de Cuisine with clear details, and ask for help before any breakdown occurs.
• Relay breakdown information immediately so the root cause can be identified and reoccurrences prevented.
• Adhere to the company's safety procedures, food hygiene and safe food handling policies, and to culinary standards for recipes, preparation and plating.
• Liaise with the Stewarding Manager to keep the kitchen clean, and communicate equipment malfunctions to the Chef de Cuisine so engineering can respond.
• Follow all set-up times and meal-period breakdowns, and follow control and key procedures.
• Order, receive and store quality ingredients correctly using FIFO rotation, and prepare them according to recipes, plating guides and buffet setups while maximising production time and minimising waste.

Required profile

• Minimum 5 years of culinary experience in a five-star hotel.
• Solid international culinary experience.
• Ability to work in a multicultural environment.

Required skills

• Knowledge of the style of cuisine.
• Knowledge of HACCP and general health and safety in the workplace.
