Italian Specialty Sous Chef - Olio Restaurant

About the role

Jumeirah Messilah Beach, a luxury beachfront resort in Kuwait, is looking for an Italian Specialty Sous Chef to join the Culinary Team at Olio Trattoria Italiana. The role leads the day-to-day operation of the Olio kitchen, ensuring culinary and service standards are consistently maintained.

Key responsibilities

• Lead the daily operation of the Olio kitchen, preparing and supervising high-quality Italian cuisine to approved recipes, portion sizes and plating standards.
• Develop seasonal dishes and Chef's Creations, support menu planning and bring current food trends into the offering.
• Delegate daily production requirements based on business forecasts and supervise the team during preparation, set-up, service and breakdown.
• Expedite orders during service and ensure quality ingredients are correctly ordered, received, stored and rotated (FIFO).
• Inspect incoming produce, check refrigerators and food-storage areas, and control portions, production and waste to support food-cost targets.
• Maintain food safety, hygiene and safe food-handling standards, and work with Stewarding to keep kitchens clean.
• Train and coach culinary colleagues, hold team briefings, plan food promotions and coordinate with Food & Beverage Service and other departments.
• Maintain kitchen documentation and report operational issues to the Executive Sous Chef or Executive Chef.

Required profile

• Minimum 5 years of culinary experience in a five-star hotel.
• Solid international culinary experience and knowledge of Italian cuisine.
• Ability to work in a multicultural environment.

Required skills

• HACCP knowledge.
• General health and safety in the workplace.
