DFAC Manager – Food Services Operations

About the role

The DFAC Manager oversees all food service operations at a military dining facility in Kuwait, ensuring compliance with performance standards and government regulations. Reporting to the DFAC Area Manager, the role manages both in‑house staff and subcontractors to deliver safe, high‑quality meals for up to 5,000 personnel per shift.

Key responsibilities

• Direct daily operations of the dining facility, including food preparation, serving, cashiering, and sanitation.
• Receive, store, and issue CLASS I Operational Rations while maintaining strict temperature and humidity controls.
• Plan 28‑day menus in coordination with the Government Food Service Advisor and manage requisitioning through the STORES and DSCP systems.
• Supervise 40‑90 personnel, including subcontractors, ensuring adherence to the Performance Work Statement, military regulations, and the Tri‑Service Food Code.
• Maintain equipment accountability, serviceability, and cleanliness; oversee HACCP procedures.
• Track inventory levels of consumable and non‑consumable items and execute timely turn‑in and ordering.

Required profile

• High school diploma or equivalent; associate degree preferred.
• Experience managing large‑scale food service operations, preferably in a military or government setting.
• Ability to lead diverse teams and coordinate with government advisors.
• Knowledge of FM 10‑23‑2, Chapter 13, and related food safety regulations.
