Demi Chef de Partie - Sushi Specialist

About the role

Jumeirah Messilah Beach, a luxury beachfront resort in Kuwait with 316 rooms and suites, 79 residential suites and 10 villas, is hiring a Demi Chef de Partie for its Cold Kitchen. The role supports the culinary team and focuses on sushi preparation.

Key responsibilities

• Assist colleagues and support the culinary teams when needed, helping build team spirit, credibility, respect, openness and trust.
• Report accidents and sickness immediately to the Chef de Cuisine with clear details, and ask for help before any breakdown occurs.
• Relay breakdown information immediately so the root cause can be identified and reoccurrences prevented.
• Adhere to company policies on safety procedures, food hygiene and safe food handling, and to culinary standards for recipes, preparation and plating.
• Liaise with the Stewarding Manager to maintain high cleanliness standards in the kitchen, and communicate equipment malfunctions to the Chef de Cuisine so engineering can respond.
• Follow all control and key procedures, and adhere to set-up times and breakdown schedules for each meal period or event.
• Order, receive and store quality ingredients correctly using FIFO rotation, and prepare them according to recipes, plating guides and buffet setups while maximising production time and minimising waste.

Required profile

• Minimum 5 years of culinary experience in a five-star hotel.
• Solid international culinary experience.
• Ability to work in a multicultural environment.
• Knowledge of the style of cuisine and of HACCP, as well as general health and safety in the workplace.
